Weekend Breakfasts At Beardslee Public House – Finally, A Good Reason For Residents Of Bothell, WA, To Wake Up Hungry!
If you live in eastern Bothell, you already know that going out for breakfast or brunch has never been much of an option here.
Well, not until this September that is, because Beardslee Public House has opened for breakfast for the first time, finally giving Bothell residents a wonderful reason to wake up hungry!
The menu, carefully put together by Beardslee’s Chef Jed Laprade and his team, is a winning combination of fresh, made-from-scratch dishes, washed down with morning cocktails that you can enjoy – guilt-free! – at a breakfast or brunch table.
“We wanted to have something for everybody at breakfast,” says Chef Laprade. “But at the same time, we wanted to make the first meal of the day seem extra special by adding a custom Beardslee touch to traditionally popular breakfast choices.”
The Graham Cracker Pancakes, for example, topped with chocolate and toasted marshmallows. The Tempura Bacon with a Sambal Maple dipping sauce. The Granola Parfait, that has granola made in-house with almonds and coconut. Or the gigantic Cast Iron Cinnamon Roll that is big enough to share with all your friends – as long as nobody argues over the last piece! “If you’re stepping out for breakfast, the food better set a happy, satiated tone for the rest of your day.”
Guests have already declared that they love Laprade’s lavish French Toasts, made with thick-cut cinnamon bread (locally sourced from a bakery just down the road), homemade crème brulee batter, caramel, apples and golden raisins. And the baked eggs, cooked in Beardslee’s brick oven and served in an iron skillet with Andouille, Chorizo and Italian as your taste options.
Then there’s the ultimate breakfast gourmet pleaser: the Egg Benedict.
Beardslee is baking its own English muffins, and topping them up with house cured and smoked pork loins or veggie options with a russet or sweet potato hash on the side.
And finally, there is Canada’s proud contribution to world cuisine — the Poutine — that is probably all the reason anyone needs to go taste Beardslee’s breakfast fiesta for the first time. With homemade sausages, poached eggs, hand-cut fries, brown veal gravy, and Beecher’s cheese curd, this is a Poutine that even dyed-in-the-wool Canadians would have to grudgingly accept as “unaccountably splendid”.
“Incredible and simply over the top,” is how Jed Laprade describes it, and indeed, there’s nothing quite like a rich, salty Poutine to enhance the flavors of a morning cocktail.
Which brings us to the morning cocktails, of course. The magic breakfast sauce you’ve probably been waiting for.
There are a couple of different Mimosas (Amandamosa with Grapefruit juice, St. Germaine and Cava being a house favorite). And three kinds of Bloody Marys — Peppercorn Mary, Habanero Mary and Pickled Mary – that need your full attention because you have to eat and drink these tasty towers of savory-laden goodies.
So come with a hungry stomach and a morning-fresh mind, and let the Beardslee Breakfast kick-start a day that ends as wonderfully as it began.

That hungry “Sasquatch” who broke into Beardslee Public House at a bizarrely early hour in the morning (see video below), really drove home the fact that the people of Bothell needed a good breakfast place.
So we decided to open our doors on Saturdays and Sundays, from 9 am to 11:30 am, to fill the gap.
Because we love being an active part of Bothell’s thriving local community.
And because a Sasquatch breakfast-time attack is kind of scary…
