Another fabulously simple plank cooking recipe by Plank Cooking guru Chef John Howie. This time, if anything, the recipe is even easier. You lay out some seasoned pork chops and red potatoes on the cedar plank, and the aromatic wood does its thing, flavoring the food while it cooks in the oven. “You simply cannot overcook on cedar planks because they don’t conduct heat, like say, glass or porcelain or metal,” says Chef Howie. “They get to about 180 degrees, so you’re only roasting the food on top, preserving the moisture in the food.”
Both the pork and the potatoes take the same amount of time cooking in the oven, and when it comes out, the cedar plank also serves as a beautiful serving dish. What a great thing these planks are!
